People who taught how to become in tune with the light were many-ringed guilds and leagues that trained warriors of the light. Being a paladin lore-wise means you pertain to a greater force of paladins that have a hierarchy system, with Tirion Fordring on top. Often you have some tenets of paladins sects who go to extremist lengths like the Scarlet Crusade. Because Paladin lore is heavily fixated and specifically caught up in fighting the undead scourge, it is probable that reservations against the undead would be too great to ever relent to them being bearers of the light. The higher paladin hierarchy would disallow it. Though not as crazy as the Scarlet Crusade; paladins would not be that politically correct, they are grizzled veterans of unspeakable horrors; remember this is still a worn torn world with prejudices and grudges, not some modern liberal society in the real world that would allow any race to practice sacred things. Forsaken are risen from past classes. Also Undead are Hunters already...animals would maul their bones. And Tauren are Paladins..that makes no sense. they just added a lame sun story.
